Black Bean Chili Recipe

Total preparation and cooking time:  3 hours

2 pounds Pasture Purefect ground beef
3 Onions, finely chopped
1 Bell Pepper - finely chopped
2 Stalks Celery - finely chopped 
2 Garlic Cloves - finely chopped
4 Tablespoons Olive Oil
1 15 oz can whole tomatoes
1 15 oz can tomato sauce 

1    Can tomato paste
1     Pound dry black beans
1     level Teaspoon ground black peppercorns
1/3 Teaspoon crushed red peppers
1/4 Teaspoon Cayenne pepper
1/3 Teaspoon Cumin
1/3 Teaspoon finely ground white pepper
1      Teaspoon Oregano
1      Teaspoon Basil
1/4  Teaspoon Thyme
1       Bay Leaf
1/4  Teaspoon Coriander
1       Pinch of Cinnamon
1/4  Teaspoon whole allspice
  Teaspoon Paprika
1       Tablespoons of chili powder
1       Tablespoon red wine vinegar
1       Tablespoon white vinegar
1       Heaping Tablespoon sugar


Soak and cook the beans ahead of time.

In an eight quart pot, saute onions, garlic, celery, bell pepper, and dry ingredients in 2 Tablespoons of olive oil.  Add remaining two Tablespoons of olive oil and brown the meat in pan with onions, spices, etc.

Add pre-cooked beans, canned tomatoes, tomato sauce, tomato paste, and remaining ingredients in pot.  Simmer for two hours stirring occasionally.

Makes 2 quarts.

Cook's Tip:  Like all one pot meals, this always taste best when made a day ahead.
